Stuffed Peppers



The perfect weeknight meal. Bell peppers stuffed with vegan ground meat, onions, tomatoes, rice, cheese and so much more. You'll find yourself always coming back to make this recipe over and over!


Ingredients

1/2 onion diced

12oz of vegan ground meat

1 tbsp vegan butter

28oz can of diced tomatoes

1 tbsp of crushed garlic

2 tsp Italian seasoning

1 tsp salt

1 tsp pepper

1 beefless cube plus 3 tbsp water

1 cup of cooked rice

1/2 cup of vegan shredded mozzarella

3 bell peppers, mixed colors

6 slices of vegan provolone

Olive Oil



Directions

Preheat oven to 350

In a large pan heat a little olive oil over medium high heat

Add in your onion

Sauté for 3-5 minutes until truculent

Add in you vegan grounds

Cook until browned

Add in butter

Once butter has melted add in your garlic

Stir in your can of tomatoes

Season with Italian seasonings, salt and pepper

Cook for 2-3 minutes

Stir in your cooked rice and vegan cheese shreds

Add in your beef-less cube and water, cook until thickened then turn off heat

Cut your bell peppers in half, remove seeds and white part from insides

Place them into baking pan skin side down

Fill each pepper generously with meat and rice mix

Top each with provolone slices

Place in preheated oven for 45 minutes

Remove and let cool slightly

Serve and enjoy!
