We have all heard of stuffed peppers, but today we are stuffing tomatoes. And using small pieces of pasta instead of traditional rice. Not only are these stuffed tomatoes beautiful, they are hearty and delicious.
Ingredients
6 large beefsteak or hothouse tomatoes
2 cups of cooked small pasta, we used cavatelli
1-2 cups of cooked ground vegan sausage
2 cups vegan mozzarella shreds
1/3 cup of fresh basil, plus more for garnish
1 cup of bread crumbs
1/3 cup of melted vegan butter
Pinch of crushed red pepper
Olive Oil
Salt and Pepper
Directions
Preheat oven to 400
In a medium bowl add you small pasta, sausage, mozzarella, basil
Add in roughly 2 tbsp of olive oil
Season with salt and pepper, and a pinch or two of crushed red pepper
Mix well, set aside
Cut the tops of your tomatoes off
Remove the flesh inside to hollow out the tomato, use flesh for another recipe
Stuff your tomatoes with pasta mix
Place into baking dish
Top each tomatoes with breadcrumbs
Drizzle tops with melted butter
Bake in preheated oven for 30 mins
Remove and let cool 5 minutes
Plate and drizzle with balsamic glaze and garnish with fresh basil
Serve and enjoy!
