Twice Baked Potato Casserole

Such a delectable potato dish. It’s creamy and rich in flavor. Ingredients 4 lbs of potatoes 1/2 cup vegan butter, softened 1 cup non dairy unsweetened milk 4oz vegan cream cheese 4 oz vegan sour cream 4 oz vegan cheddar shreds 7 oz vegan mozzarella shreds 1/4 cup of vegan bacon pieces Salt and pepper 1/2 of green onions, chopped Vegetable oil or cooking spray Directions Preheat oven to 425 Pierce potatoes with fork Coat your potatoes with oil Bake in preheated oven for roughly 55-65 minutes until tender Remove from oven Turn oven down to 350 Place potatoes into a large bowl Add in your butter and milk Mash until creamy Add in you cream cheese, sour cream, both vegan shreds, 1/4 cup green onions and bacon pieces Mix well Season with salt and pepper Mix well Place into greased 9x13 baking pan Bake in preheated oven for roughly 30 mins Broil for 5 minutes Remove and let sit 5 minutes

Garnish with remaining green onions Serve and enjoy
