Vegan Sausage, Egg and Cheese Breakfast Rolls



Wow, talk about your new favorite breakfast! And they're perfect to make and take to go. Even perfect for a brunch gathering, but these will go fast. I definitely think this is the breakfast dish you could trick your non vegan friends into thinking it wasn't vegan. And the best part is they are super easy to make.




Ingredients

Beyond Meat Breakfast Sausage links

1 Can of Crescent Roll dough

2 Just Egg containers

1 1/2 cups of Vegan Shredded cheddar cheese, we used Follow Your Heart

Salt and pepper

Chives for garnish

Melted butter, roughly 1-2 tbsp



Directions

Preheat oven to 375

Cook sausage according to directions, but removing 2 minutes of cooking time

Remove from pan and gently wipe pan clean

Return pan to medium high heat (closer to a high heat)

Whisk in your Just egg

Scramble until thickened, usually takes 10-15 minutes

When almost to done, add in your cheese

Mix well until melted

Turn off heat

Season with salt and pepper

Allow scrambled eggs and sausage to cool slightly

Roll out your dough

Keep dough attached so that it is one large triangle

Pinch edges to seal

Cut out 8 equal squares

In the center of each square add a little scrambled eggs

Add one sausage link

Taking two corners fold in like a blanket and pinch to seal

Place onto prepared baking sheet

Repeat with remaining rolls

Brush each with melted butter

Bake in preheated oven until golden, roughly 13-15 minutes

Garnish with chives

Serve and enjoy!
