Beefless Pinwheels


This is my take on a Beef Pinwheel which is usually made using flank steak or beef thats been flattened out and then topped with a variety of ingredients and rolled up, sliced and grilled.


Today we have made a vegan version that not only tastes super delectable but is absolutely stunning. Serve this dish up and watch your guests be blown away. And great news is, its not very difficult to make and takes very little time.


Can be served alongside potatoes, rice or pasta.


Ingredients

2 9oz packages of Gardein Beefless tips, thawed

12-14oz of spinach, sauteed and seasoned with a bit of salt and pepper (liquid removed)

3/4 cup of roasted red bell peppers

1 tsp of crushed red pepper

1 tsp salt

1 tsp pepper

7oz of vegan cream cheese, we used VioLife Cheddar Cream Cheese

Oil for pan frying


Directions

On a large working space lay down a large sheet of saran wrap

Place your thawed beefless tips on working space

Using your hands mash them together to form a ball, making sure it forms into dough

Then carefully press that dough out onto saran wrap and flatten out to large square/rectangle circle

Spread your cream cheese evenly over your beefless surface

Top evenly with your spinach

Followed by bell peppers

Season with crushed red pepper, salt and pepper

Starting at one end, carefully and tightly roll up to form a pinwheel

Wrap tightly with saran wrap

Place into freezer for 20-30 minutes to set

Remove and unwrap

Slice into roughly 1" slices

Heat a little oil in a non stick pan over medium high heat

Place your slices into pan and cook on all sides for roughly 3-5 minutes until browned

Remove from heat and repeat with remaining slices

Serve and enjoy!
