Creamy White Bean Chili

This creamy white bean chili is rich, cozy, and packed with flavor and without any dairy. This vegan chili is perfect for chilly nights, meal prep, or an easy weeknight dinner.


Ingredients

1 onion, diced

2 tbsps minced garlic

1-4oz can diced green chiles

1 tsp paprika

Pinch of salt and garlic pepper

1 cup corn

1 can white kidney beans, drained

2 cans white navy beans, drained

1/3 cup salsa verde

3-4 cups vegetable broth

1 bouillon cube, if your vegetable broth is strong you can omit this

1 cup shredded mozzarella 

For garnish, lime, cilantro, jalapeño and vegan white crumbled cheese like feta


Directions

Heat a large pot to medium high heat

Add roughly 2 tbsps of oil 

Add in your onion

Cook until starting to turn translucent 

Add in your garlic and chiles

Cook for 2-3 minutes

Add in paprika and season with salt and garlic pepper

Mix

Add in your corn, beans and salsa verde

Mix well

Add in your broth and bouillon cube

Cook for 10-15 minutes stirring often

Turn heat down

Add in your cheese

Cook until melted

Turn off heat

Serve

Top each bowl with crumbled cheese, cilantro, jalapeños and lime wedges
